Shangri-La Hotel Colombo overlooks the Indian Ocean in the heart of the business district with direct access to the most extensive international shopping mall in Sri Lanka, Shangri-La’s own One Galle Face Mall. The hotel offers the finest accommodation in Colombo, an exciting new dining and social scene and the largest and extensive hotel conference and event facilities. The hotel comprises of 541 rooms and suites.

We are seeking a passionate, hands-on, and dynamic culinary professional to join our team as Executive Chef, leading the hotel’s culinary operations while delivering exceptional guest experiences, operational excellence, and high levels of colleague engagement. The ideal candidate should be a visible leader on the operational floor who works closely with fellow colleagues and actively engages with guests to create memorable dining experiences.

 

In the role, we rely on you to:

  • Lead and oversee all culinary operations of the hotel, consistently delivering exceptional food quality and outstanding guest satisfaction, achieving a 4.8 Google guest rating across all outlets.
  • Act as a hands-on and visible leader, working alongside culinary colleagues on the kitchen floor and confidently engaging with guests.
  • Drive operational efficiency, cost control, and profitability across all kitchen outlets and banquet operations.
  • Conceptualize and develop innovative menus, themed dining experiences, and creative culinary concepts that enhance the hotel’s reputation and drive revenue growth.
  • Ensure the highest standards of hygiene, sanitation, food safety, and full HACCP compliance are maintained at all times.
  • Inspire, mentor, and develop a high-performing culinary team through structured coaching, training, and talent development initiatives.
  • Build strong and lasting relationships with colleagues and guests through a consistent on-floor presence during service and operational periods.
  • Monitor guest feedback and implement continuous improvements to culinary offerings and overall dining experiences.
  • Lead by example with passion, professionalism, and an unwavering commitment to excellence in every aspect of kitchen operations.
  • Foster strong teamwork and seamless communication between culinary teams and all other hotel departments to drive financial success, strengthen F&B branding, increase market share within the city, and position the hotel’s F&B offering as a destination of choice among competitors.

 

We Are Looking for Someone Who:

  • Has minimum 5–7 years of relevant culinary experience in a senior culinary management role within a 5-star international hotel environment, including Michelin-star exposure.
  • Is a passionate, hands-on, and highly talented culinary leader who enjoys maintaining a strong on-floor presence with colleagues and guests.
  • Has strong expertise and advanced knowledge across multiple cuisines, culinary techniques, plating, and luxury-style presentation.
  • Demonstrated ability to motivate, mentor, and build highly engaged culinary teams through leading by example.
  • Has excellent guest engagement and interpersonal skills, with a proven ability to create memorable and elevated dining experiences.
  • Has sound knowledge and hands-on experience in Food Safety Management Systems and HACCP procedures.
  • Is a creative, energetic, and results-driven professional with strong business acumen.
  • Has excellent communication skills with fluency in spoken and written English; proficiency in additional languages is considered an added advantage.
  • Is self-motivated, adaptable, and capable of thriving in a fast-paced luxury hospitality environment.
